Ingredients
- Chicken thighs, bonelss and skinless - 1.50 lb
- Salt, kosher - 1/8 teaspoon
- Cornstarch - 1.25 cups
- Oil, vegetable or peanut - 1 quart (for fying)
- Lemon wedges
For the marinade:
- Soy sauce - 0.25 cup
- Garlic cloves, minced - 2 pieces
- Ginger, grated fresh - 1 tablespoon
- Sake - 2 tablespoons
- Sugar - 0.75 teaspoon
Instructions
- Start by creating the marinade
- In a bowl, combine soy sauce, sake, ginger, garlic, sugar, and salt.
- Add chicken and toss to combine.
- Let sit at room temperature for 30 minutes.
- Prepare a bowl and put cornstarch.
- A piece at a time, lift chicken from marinade, shake off marinade back into bowl but let garlic or ginger bits stay on chicken, then coat with cornstarch. Shake off excess cornstarch
