Japanese Fried Chicken Thighs (Karaage)

Ingredients
  1. Chicken thighs, bonelss and skinless - 1.50 lb
  2. Salt, kosher - 1/8 teaspoon
  3. Cornstarch - 1.25 cups
  4. Oil, vegetable or peanut - 1 quart (for fying)
  5. Lemon wedges

For the marinade:

  1. Soy sauce - 0.25 cup
  2. Garlic cloves, minced - 2 pieces
  3. Ginger, grated fresh - 1 tablespoon
  4. Sake - 2 tablespoons
  5. Sugar - 0.75 teaspoon
Instructions
  1. Start by creating the marinade
  2. In a bowl, combine soy sauce, sake, ginger, garlic, sugar, and salt.
  3. Add chicken and toss to combine.
  4. Let sit at room temperature for 30 minutes.
  5. Prepare a bowl and put cornstarch.
  6. A piece at a time, lift chicken from marinade, shake off marinade back into bowl but let garlic or ginger bits stay on chicken, then coat with cornstarch. Shake off excess cornstarch

Yield: Serves 4
